EN: Meet Christian (left) and Oscar (right), two Salvadoran cousins working in the kitchen of Restaurant Bricco West Hartford, getting back to action after the reopening last week. As Latinos, they have absorbed the cooking style of the Grant brothers and are two of the many pillars that make the restaurant’s cuisine one of the best of its kind. Billy Grant has a very international staff that functions like one big family, which is why Bricco is crowded every day.

I met Christian and Oscar while running food at Restaurant Bricco West Hartford. They were very welcoming with me and started joking with me about Cuba and communism. The more I spent time with them, the more I grew fond of them and their sense of humor.

They both took their time to prank me more than once, and also spent time teaching me about the plates I had to serve and what the difference between some salads and some cooking times for things like salmon were.

I was convinced that they had to be some of my first subjects for this project. When I told them what I wanted to do, they were both very enthusiastic and did not hesitate to pose for a photo.
